Slaton is named for Lubbock rancher and banker O.L. Slaton, Sr.The St. Joseph Sausage Fest is put on every October by St. Joseph's Catholic School. The event has been held annually since 1969 and is the school's primary fundraiser. Volunteers make 7,000-8,000 pounds of sausage to sell at the weekend-long event. Slaton is a city in Lubbock County, Texas, United States. The population was 6,109 at the 2000 census. It is part of the Lubbock Metropolitan Statistical Area.
